Vasilis Vaimakis is a pioneer winemaker and is often considered the godfather of natural wine in Greece. In the '90s, he worked for major wineries producing commercial wine and later earned a PhD focused on preventing oxidization in white wine. In the early aughts, he began experimenting with no-sulfur winemaking, which led to immediate success. His alpine climate in Macedonia, with very cold winters, produces wines that have more in common with Switzerland and Trentino-Alto Adige than island wine.

This wine features organic Xinomavro grapes fermented with native yeast in stainless steel and bottled unfiltered, unfined, and without sulfites. The resulting dark brick red wine boasts intense gooseberries and leather notes on the nose, with a hint of hay. The palate is surprisingly clean, with playful tannins that dance across your tongue.
