Vallisto was named after the word used to identify locals from the surrounding area. Owners and winemakers Hugh Ryman and Pancho Lavaque work with an old farmer who refused to rip out his Criolla vines to plant Malbec on this unique vineyard located at a staggering 2,600 meters above sea level.
