The Hubert family began tilling their vineyards in the Peybonhomme region over two centuries ago, and their connection to the land has grown stronger with every vintage. At the turn of the millennium they adopted biodynamic cultivation techniques, a commitment to the land and environment that continues to this day. Their holistic approach to winemaking includes everything from double guyot pruning to the use of herbal teas for treatment.

The wine, "L'Amour Du Risque," is a sparkling marvel that challenges conventional winemaking norms. Made from the Cabernet Franc grape variety grown on their limestone-clay terroir, this wine is crafted using only the residual sugars of the grapes, a divergence from the typical Champagne method of adding a liqueur. This unique process imparts a very fine bubble and a fresh nose, reminiscent of crisp apple and white peach.
